Homemade Breakfast Granola
Preheat oven to 350
Mix dry ingredients:
2 cups rolled oats - old fashioned kind
1 cup of nuts- walnuts or mix it up with almonds and/or cashews
1/2 cup flaked coconut (unsweetened is preferable)
1/4 cup sunflower seed
1/4 cup pumpkin seed
1 - 2 Tablespoons sesame seed
1 – 2 teaspoons chia seeds and or flax seeds
Mix in wet ingredients:
1/4 cup of honey
1/8 cup brown sugar or coconut sugar
1tsp vanilla
1/4 cup olive oil
Bake at 350 for 10 minutes
Stir and flatten again, cook 5 more minutes (may take 10 min depending on oven)
It should be “light” brown as it will continue cooking out of oven
I dump it on aluminum foil and flatten out to let harden.
Break up and mix in preferred dried fruit (blueberries, golden raisins or your choice)
Store in airtight containers for up to 2 weeks

INGREDIENTS
· 1 cup old-fashioned oats
· ½ cup raw shelled pistachios
· ½ cup walnuts
· ½ cup raw sunflower seeds
· ¼ cup raw sesame seeds
· 1 tablespoon fennel seeds
· 1 teaspoon kosher salt
· ½ teaspoon cayenne pepper
· 1 large egg white, beaten to blend
· ¼ cup olive oil
· 1 tablespoon agave syrup (nectar) or maple syrup
RECIPE PREPARATION
· Preheat oven to 350°. Toss oats, pistachios, walnuts, sunflower seeds, sesame seeds, fennel seeds, salt, and cayenne pepper with egg white, oil, and agave syrup in a medium bowl. Transfer mixture to a rimmed baking sheet and bake, stirring once, until golden, 25–30 minutes. Let cool.
Alternates – add cranberries, crystallized ginger or change up spice with ground ginger, turmeric, chili, cumin
Try different combinations!!
